I'm sure you've noticed the metal coffee pots during your holiday in Italy, either in your apartment or in local shops. Italians can't imagine their day without coffee, so the traditional Moka coffee machine is a common fixture in up to 90% of Italian households. The preparation is not difficult and you can do it without any problems!

In Italy, coffee is much more than just a drink - it's a daily ritual, a symbol of hospitality and a moment of peace. And the moka pot, the iconic aluminium (or even stainless steel) coffee machine, is one of the most traditional ways Italians prepare their favourite black coffee. This simple but ingenious invention is not to be missed in any Italian household. So how do you make the perfect mocha pot coffee?

How does a moka pot work?

The moka pot works on the principle of hot water pressure rising through the finely ground coffee into the upper chamber. It consists of three parts: the lower water container, the metal sieve for the ground coffee and the upper part where the finished beverage is collected.

Step-by-step preparation

  1. Coffee Selection - Use a good quality medium to dark blend, preferably ground to a coarseness resembling semolina sugar. Grinding too fine can cause clogging of the teapot.
  2. Filling with water - Pour water into the bottom of the teapot up to the safety valve. Filtered water is best and will not affect the taste of the coffee.
  3. Pouring the coffee - Pour the coffee into the metal strainer and align it with a spoon. Do not squeeze the coffee to allow the water to pass freely.
  4. Assembling the teapot - Put the top on and screw it on tightly.
  5. Brewing - Place the teapot over a medium flame and wait for the coffee to start rising into the top pot. When you hear a characteristic gurgling sound, it's time to turn it off. Do not brew coffee over a high flame, you risk burning the coffee.
  6. Serving - Pour the coffee into small cups and enjoy its full flavour.
