A combination of three perfect layers
The Bicerin (in Piedmontese, "glass") is traditionally served in a glass cup without an ear to show its three layers:

Unlike other similar drinks, the layers are not mixed, but drunk as they are - connecting on the tongue with each sip.
Where does it come from?
Bicerin has its origins in the 18th century, when it was first served in the historic Caffè Al Bicerin, directly opposite the Santuario della Consolata. It was here that the original 'bavareisa' drink (served separately in cups) evolved into the version we know today - with the layers combined in one glass.
A favourite among the greats
Bicerin was loved by famous Turinese and visitors to the city - among them the writer Alexandre Dumas, Nietzsche and members of the Savoyard court. Today, Bicerin is considered the official traditional product of the Piedmont region.

Forthe most authentic experience, you can still go to Caffè Al Bicerin, where the recipe is kept as a secret. But today you can enjoy this drink in many cafés around Turin - and, thanks to its popularity, in some Italian patisseries around the world.

Want to make Bicerin at home? Choose good quality hot chocolate (ideally dark, thick), real espresso and whipped cream. Don't over-sweeten - the sweetness of the chocolate and the smoothness of the cream will ensure the perfect balance of flavours.
