Farinata - chickpea street food with a crispy edge
Farinata is a classic Ligurian "street food" - a simple but addictive dish made with chickpea flour, water, olive oil and salt. The dough is baked in shallow copper moulds until the surface is golden and slightly crispy, while the centre remains supple. It is best fresh out of the oven, sprinkled with pepper, or topped with onion or rosemary.

The second principle: it's not just basil - the key is Ligurian DOP basil, pine nuts, extra virgin olive oil from the Riviera, Parmigiano Reggiano, Pecorino Fiore Sardo, garlic from the Vessalico region and a pinch of salt.
When all the ingredients are combined by hand, they produce a creamy, fragrant, fresh paste that holds its colour beautifully. It is served not only with pasta (the most famous is trophies al pesto), but also on potatoes or green beans. It is Liguria's most famous gastronomic symbol - and a demonstration of how simplicity can be a true art.
Torte salate - savoury cakes full of vegetables and tradition
Ligurian torte salate are savoury cakes that combine Mediterranean lightness with home cooking. The most famous of these is the torta pasqualina, traditionally prepared at Easter. It is characterised by several layers of extremely thin dough (traditionally there are 33 layers), between which is a filling of spinach or chard, ricotta, marjoram and whole eggs, which are baked directly in the cake.
Today, torte salate is made year-round in many variations - with vegetables from local gardens, cheese and herbs. They are light, hearty and great as a quick lunch, picnic or street food.
